The first time you run BackItUp, you only have one choice: Full backup.
As the name suggests Full backup does full backup. After the Full
backup, you have 3 choices: Full, Incremental and Differential.
Incremental backs up files changed/added since the last incremental or
full backup. Differential backs up files changed/added since the last
full backup.
The differences between incremental and differential are that
incremental is smaller, but restoring incremental takes longer as it has
to restore from the full and then all the incrementals, starting from
the oldest, since the full.
With differential, however, only the full and the last differential need
to be restored.
