I'm looking for the best way to set up 8 web cams up at one time on one
system to record video for around 3-4 hours of low res video when
active. I know that most windows cams don't work well with the same
model, but I'd like to keep them all the same if possible. Any
suggestions for hardware/software? I'd appreciate it, thank you.

You probably need to look at some of the security multi cam
setups like at the below sites.

Our software CamPanel will do this:
